Fruit Shrub from Chef Stephanie Speir

1.5 quarts fresh fruit (remove rind & seeds of melons or citrus and dice melon small)
1 cup organic raw apple cider vinegar
simple syrup (instructions below)
1 liter organic tonic water

Combine fruit and vinegar in a glass owl, cover and let macerate three days. When ready, strain liquids from solids, then add simple syrup and tonic water to desired taste.

Simple Syrup Recipe
1.5 cups water
1 cup organic can sugar

Combine water & sugar in a saucepan, simmer (stirring often) until sugar is completely dissolved. Cool and refrigerate until needed.

**Chef Stephanie’s Notes: She uses double the fruit, therefore all the simple syrup and tonic. One can cut the quantity where needed!
