Pumpkin Cookies
• 1 cup almond flour
• *1⁄2 teaspoon baking powder
• 1⁄2 teaspoon baking soda
• 1 teaspoon cinnamon
• 1⁄4 teaspoon ground cloves
• 1⁄2 teaspoon nutmeg
• 1⁄2 teaspoon ginger
• 1 egg
• 1 cup organic pumpkin
• 1⁄2 cup coconut milk
• 4 Tablespoons pure maple syrup
Directions Preheat oven to 375 degrees. Combine all ingredients in a large bowl. Drop by spoon onto a parchment paper-lined cookie sheet. Bake for 15+ minutes or until golden brown. Baking time will depend on if you want soft or crispy cookies.
*Be sure that you are using baking powder that doesn’t have corn starch. Always check ingredients!
