In an interesting bit of investigative reporting, it has been learned that many commercial baked goods are made with a industrial plastic chemical called azodicarbonamide or ADA. This is the same stuff that yoga mats are made out of and it turns out it makes an excellent “dough conditioner”, rendering huge batches of dough easier to knead in commercial mixers.
